Homemade Pumpkin Pie from SCRATCH

Cut 8" pumpkin in half (8" yields the 3 cups required), scoop out seeds, place upside down on cookie sheet, cook at 350 for 1 hour. Scoop out and use blender or food processor to make it creamy.

1 cup sugar
1.5 teaspoon ground cinnamon
1 teaspoon ground allspice
1/2 teaspoon ground giner
1/2 teaspoon salt
4 large eggs
3 cups pumpking 'glop'
1.5 cans (12 oz each) of evaporated non-fat milk

Mix together with mixer or blender. Bake at 425 for 15 minutes, turn temp down to 350 and bake another 45-60 minutes; until knife inserted in the center comes out clean.



Pumpkin Streusel Muffins

1/4 cup margarine or butter, softened
1/2 cup sugar
1/4 cup brown sugar
2/3 cup pumpkin
1/2 cup buttermilk
2 eggs
2 cups flour
1 teaspoon baking soda
2 teaspoon baking powder
1 teaspoon pumpkin pie spice

Streusel Topping:

1/4 cup flour
3 tablespoons brown sugar
2 tablespoons cold butter or margarine

For Muffins: cream together margarine and sugars. Add all remaining ingredients and mix together. In a separate bowl, cut together streusel ingredients and sprinkle over muffin batter. Bake in prepared muffin tin at 375 for 20-25 minutes. Makes one dozen muffins. :)




Sweet & Spicy Pumpkin Seeds


1 egg white
1/4 cup sugar
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1 cup fresh, dry pumpkin seeds

Whisk together the egg white, sugar, cayenne and salt. Add the pumpkin seeds and toss well. Place seeds in a single layer on a cookie sheet. Bake at 300 for 35-40 minutes until golden brown. Turning every 10 minutes or so.



Pumpkin Pie Pumpkin Seeds


1 cup fresh, dry pumpkin seeds
2 teaspoon butter
1/2 teaspoon cinnamon
1/4 teaspoon giner
1/4 teaspoon nutmeg
1/4 teaspoon cloves

Mix butter and spices together. Add pumpkin seeds. Bake at 300 for 30 minutes or golden brown. Turning every 10 minutes or so.


Italian Style Pumpkin Seeds


1 cup fresh, dry pumpkin seeds
1-1/2 teaspoon olive oil
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
Sprinkle of dried basil
Sprinkle of parmesean cheese

Drizzle olive oil over seeds. Add spices. Toss thoroughly. Bake at 300 for 3o minutes or golden brown. Turning every 10 minutes or so.
